Oil running hot

Hello,
I have a Ford FE 427 with a remote oil cooler and fan.My water temp is around 140 degrees but oil temp shows to be running over 300 degrees.Cruising at about 50 mph and weather was 80 degrees.Oil level is fine.Any ideas what could be the problem?Thanks in advance.

Before you do anything rash, get a little infrared pyrometer at Lowes, Home Depot, or the like and take a quick temperature reading on the inlet and outlet of your oil cooler (you just point and pull the trigger). That will help you get a double-check on the temperature of your oil just in case your gauge is giving you a false reading.

Bad gauge. Naughty oil temp gauge. Woof, woof.

Remove the oil temp sender from the block and stick it in a cup of boiling water ... see what the gauge reads.

What is the oil temp after the engine is running for 5 minutes? Possibly a bad gauge or sensor.

After 5 minutes temperature shows about 200 degrees then seems to get erratic after that.Needle shoots up to right side of gauge and then comes back down to 300.

sounds like a bad sender or gauge as mentioned earlier. Oil temp just doesn't change that fast driving on the street.

Before you start replacing sensors and gauges go over all your electrical connections and wiring in that circuit. It could be a loose/grounded terminal or wire. It does sound like you have a bad sensor though.

And check the coolant temperature with that infrared thingy, it is either too hot (if reading in Celcius), too cold (if in Fahrenheit) or (most likely) also malfunctioning. Coolant should be above 180 F and oil above 225 F for best performance and engine life.
If both oil and coolant temps are okay and gauges are wrong, it would likely be an electrical problem, but "could" be two bad gauges/sending units.
