Zucchini Brownies
Latest Review: "Good of zucchini, but the brownies were just ...more"

Prep: 15 mins Cook: 30 mins Ready in: 45

Ingredients
1/2 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1/2 cup chopped walnuts

6 tablespoons unsweetened cocoa powder
1/4 cup margarine
2 cups confectioners' sugar
1/4 cup milk
1/2 teaspoon vanilla extract
Cooking Instructions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.

In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.

Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

What a great evening for a ride yesterday. We had Noah's ark weather in July and now we have fall in August. Temp yesterday was about 75°F. Moved about a ton of stuff from garage and back porch into the cellar. Went for a drive about 4 PM, but it was cool on the way home at about 9 PM. I almost stopped and got a jacket out of the trunk. ( for everyone in TX heatwave).

Long range forecast is for the next 10 days has rain and t-storms for 7 of those day, but the highest temp of only 78°F. Weird weather.

Friday a major Texas Cold Front came slamming down from the north (96).We lucked out in that yesterday the tempts bounced back to our normal balmy weather (104).

Try this one.

Preheat oven to 325*
Get a new 1 x 12" Cedar wooden board
Cut the squash in half
Put the cut pieces on the board
salt and pepper to taste
Put everything in the oven for 20 minutes
Take it out of the oven and let rest for 10 seconds
Throw away the squash and eat the board.

Fred - does your jacket come with central air conditioning? Temp here is all the way up to 71°F and the sun is out. I guess us foodies are going to have to look out for Joe and Steve. Maybe we can refer to them as the "Veggie Haters" or the "Squash Squishers", or ???

I can remember my mother cooking calves liver for me and my sisters when we were kids. We all hated it. She was a great cook, but she cooked the liver so long it tasted like leather. We used to hide it in our pockets and then feed it to the dogs when we went outside to play after supper.

Just finished a great homemade Sunday brunch ... Spanish omelet with cheese, grilled potato slices, half a chicken breast grilled, English muffin with jelly, some apple juice, coffee and a small grapefruit.

In all seriousness I am willing to try new things. The problem I have is with things I have already had and had forced on me. I know it is a mental thing. I know that if I could get past it my food options would open up. I know it is me, but it does not seem to matter. I cannot seem to get past it and I stopped trying. I eat what i like and I don't eat what I don't. I like to eat too much to force myself to eat stuff that makes me gag.

Warren, I am not a veggie hater, just certain veggies. I like most of my veggies raw, I can even eat cabbage and spinach as long as it is raw. I also cannot stand Liver. I like the taste of it when I am eating it, but after words I have have this after taste in my mouth that I do not like. No gag reflex or anything like that.

Your wrong buddy, I love veggies. Most all of them. I eat some sort of veggie everyday.

I have eaten Okra cooked several different ways, I just don't prefer it.

To me at least, there is a difference between not preferring something (okra) and getting sick (projectile vomiting) just from being in the same room as something (squash).

Believe me it has happened on much more than one occasion and it is never pretty.

Kind of.

I have the following vest I wear.It soaks up close to a gallon of water ! I wore it today,106,and never got all that warm.After 5 hours,it was cooling just as well it did the first half hour.I also have a neck collar I soak in ice water for an hour,has the same material in it the vest has.That alone works wonders.

Its a balmy 66°F outside right now. Too bad the streets are still wet from yesterdays storms. About 50 miles away from me they had hail about the size of a nickle. In one place, the hail was 3 inches deep before it melted. Another place got almost 4 inches of rain in 3 hours. Can you say "Flash Flood?"
