Darn. The temperature here has dropped about 15 degrees in the last 30 minutes. It was sunny and now a very cold fog has moved in and it is really cold. The weather guy said it should be sunny again by noon, but just before this fog came in, he said it would be sunny all day and in the mid 60s. This is downright miserable and time to go back to bed.
One funny thing. My neighbor went fishing this morning while the sun was out and it will be at least 15/20 degrees colder in those canyons than up here.

I didn't exactly measure everything, I never do, but here is what I did:

I brought the mixture to a boil and then simmered for 1 1/2 hours. stirring every 20 min or so. I then put it into canning jars and after they cooled and sealed, I placed them in the fridge. I have been working on this recipe for about 4 years now and I think I am ready to commit it to paper. I am tempted to enter it into a contest, but I need to work on a mild variety as well I think.

Yeah, those habaneros will add kick to the pot!

How do you suppose it would taste without the habaneros?

Not sure. I was considering trying it and opening up the peppers and scraping all seeds and membranes out, then heavily washing the peppers to get rid of the surface capsasin, but just the shell will still add a bit of kick. You could also reduce the number of Habaneros and add more jalapeno or a poblano pepper. The Habanero has a sweet flavor to it, so I would find a pepper like a poblano that has a sweeter taste, and add it in if you use the recipe above. Of course you just may like it with just jalapenos. I have been working on this for years like I said. I would personally like to add more habaneros but my wife does not like it quite that hot. Flavor is good though, so I think I am going to leave it alone.

I think I could use some of that salsa today. It is windy, cool, and I have a bad head cold plus my sinuses are about to drive me out of my mind. I think this is the worst I have felt physically in two years. It is going to be a looooong day I fear. I may have yo do a Warren and stay in bed.

Sorry to hear that Ron. I brought another jar today and it was gone within 30 min of opening it. I am ready for this weekend, but I don't think I will get much of a chance to rest. Trina is able to get around now, but she still can't put any weight on her foot, so I am still taking care of everything.

I was thinking of Joes hot chili...I had to recommend something to remove paint off a part.

Those habaneros are too much for me, but I am interested in the mix.

So, did you grow the herbs or store buy them?

I am thinking I will want to can more salsa next year and would like to get a good formula down before I plan out what plants I am going to put in the ground.

Did you use Romas?

How mature were the jalapenos? I like to pick them about 2 inches unless they are going to be stuffed.

It is beginning to sound good.

I needed some of Joe's Chili here this morning.

Dallas-Ft Worth had it's first Offical FREEZE this morning.It plunged all the way down to a bone numbing 31 degrees.

Flip,the weather here is a crap shoot at best.

A little DFW weather trivia...... November is the ONLY MONTH that 90 degrees has not been recorded since records started being kept in the late 1800's.

Joe,

I hope Trina's ankle gets better quickly. I am feeling some better today. The dizziness and sick to my stomach seems to be pretty much gone. Sinuses are still a mess and I have a headache from that. But it is to cool here for me to get out and do much anyway so I will just lay around and get fatter and balder.

Fred,

You had your first freeze and we should be in the start of our heavy rain and so far we have had nothing but that one small storm that came through way back during the first part of last month. The weather patterns are changing all over the country. The next 3 days here are supposed to be sunny and in the mid 60s. Crazy for December. But they change the forecast every two hours so we never know what it is supposed to do as they never get it right anyway.

Warren,

I think you ticked off the Mt. Shasta Goddess and now we are both going to pay for it. You will have a looong, cold Winter and it looks as if we may have another dry one. Texas seems to be trying to become the next Alaska with their cooler weather. The Global Warming must be starting in that area.

Not to get nitpickey but you getting balder is kinda like the Pacific getting wetter isn't it ??

After the frigid Artic mid-30's air moves out,it is suppose to get into the 60's this afternoon and tomorrow.
