Gas Pedal
Ron,
I have seen and set behind an EM and I will tell you that my gas pedal sets a good 4" behind my brake and clutch pedals not to much different than the EM. I have never found that to be a problem. My floor pan is fairly deep as well. When I am on the interstate I just slid my foot under the pedals if I am crusing.
As far as an acceptable gas pedal there are several out there that will work just fine priced from $30 up to $100+. To answer your other questions regarding a spacer block to put your gas pedal farther away from your firewall, well I just haven't seen anyone do that yet...but you know Ford has the adjustable pedals in several of their new models now.
