how many bolts on the mains on a 69 351W block?
I am considering a new Moroso oil pan that will only fit 2 bolt mains front and rear but will accomodate 4 bolt center mains. I look forward to your replies.

Next question
If the stock oil pan was 5 quarts, is the 7 quart good enough for street and occasional strip? Is the 9 quart overkill?

7 quarts is fine.....You just want a big enough sump so that if you go with a high volume oil pump, it won't suck the pan dry.....
A 69 block should be 5 caps, 2 bolts per cap.

While the block is a 2 bolt main block, if you look at the main webs you'll see they were cast for possible use with 4 bolts. I'm not sure why, since they only came as 2 bolts, but would guess that Ford had planned on making it their HP mid size engine until the Cleveland cam out. The block could easily be made 4 bolt with some different caps, something that can't be done with the 289/302 since their webbing doesn't have the extra metal cast where the holes would need to be drilled and tapped.

All production 351W motors are 2 bolt. Pretty sure even the FRP Sportsman blocks are 2 bolt. The aftermarket SVO, and Dart blocks are 4 bolt. The 351W production blocks can be converted to 4 bolt. Believe Moroso or Milodon make 4 bolt center caps that can be installed, but haven't seen this as a popular option.
For Mustang use, a 7 qt pan should be fine. For Cobra use, get the baffled 8 qt (Moroso/Milodon), or 9 qt Canton. The acceleration, braking, and cornering of even a street Cobra throws the oil all over the pan and can easily uncover the oil pickup in a stock, or near stock pan.
For Mustang use, particularly the heavier '69's to '73's, a 393 or 408 stroker would make for a torquier engine.

4 bolt main cap conversions for 351W's are dependent on casting numbers and years. You can't just put any old cap you find in a cataloge on just any 351 block. Mexican block 302's have the bigger mains of the 351's and can be used in this conversion too.
Also, stay away from the aluminum caps out there, they are junk.
