Go with either Tilton or Wilwood pedal sets,.... both come in hanging and floor mounted, single or dual brake M/C. Check out their web sites. Fluid clutch is easier to install, but your choice of slave cylinders is either internal, or external push or pull. Some degree of fabrication to correctly install the external slave is required. Internal slaves are very good, but when they develop problems/leaks, you have to remove the tranny to get at it, a big disadvantage compared to the external types.
Sorry, can't give you any info on the tranny selection for the bow tie engine.
