Hi, Tim...I'm not in your area, so I can't answer the basic question you posed, but I do have a suggestion that might prove to be a better option than indoor/outdoor carpeting.
Find an upholstery shop that specializes in boats...they use "marine" carpet, which is waterproof and uses a backing that looks very much like thin neoprene. The carpet I saw at an upholstery shop near Houston, TX was very plush, had great color that the dealer says will not fade in the sun (most boats sit outside for all their lives) and if it does get wet, all you need to do is pull it out and let it and the jute padding dry out, then reinstall it--no need to worry about replacement. The cost is only slightly higher than regular automotive carpet (it added only $100 to the estimate for a complete recarpet on my replica).
I realize the console piece may not need to be pulled...but, if you ever get your interior soaked, you'll be looking at new carpeting unless you have something similar, so IMHO this might be a good start toward the "inevitable", as we all fear.
