Updated Steering Wheel on MKIV
Updated, changed, my 15" MKIV steering wheel out for a 60's 16" version.
Moto-Lita did a great job fabricating the steering boss so a reversal can be made easily if necessary if ever they become a concours car.
Moto-Lita gets a "10"

That is a 427 car in the works behind it. Scratch built by yours truly.

What size is the new wheel - wasn't sure if you were saying your previous was 15" or the new one? I believe the standard was 14" and was tight for leg room even on max height adjustment. I'm just in the process of getting a MKIII wheel fitted to my 427 MKIV but 15" was as large as I could go. Even then I am having to drop the seat height and am tight for knuckle room against the scuttle near the door.

Mine is the correct 16" from MKIII
Not sure why there would be a difference in cars as I just adjust the wheel as high as it goes and its fine. I fill the seat well so it were a pass for me it should be for all.

Yes, that's me
Looked again last night, my door is a 3"+ away from the knuckle hit.
I did find that the wheel itself is adjustable from below, maybe your car does not have that feature? Adds distance from the seat.
